A berry beautiful no bake cake…..

RAW CACAO & NUT BROWNIE CAKE….TOPPED WITH GOJI BERRIES & SEA SALT 

Who said cake can’t be healthy…….this cake is mouth-wateringly delicious and so easy to make. No baking involved, just throw all of your ingredients in a mixer and away you go 🙂 the addition of chopped goji berries gives it an almost chewy caramel taste and the sprinkles of Himalayan rock salt, balances the richness of the chocolate. All in all, the perfect cake.

Ingredients 

1 tbsp coconut oil

3/4 cup ground almonds

3/4 Cup ground walnuts

1/2 cup flaxmeal

1/2 cup cacao powder

2 tsp vanilla essence/extract

1/4 cup organic honey or maple syrup

12 medjool dates (pitted and chopped)

Ganache topping 

2 tbsp organic honey or maple syrup

1/2 cup cacao powder

1/4 cup coconut oil

2tsp vanilla essence/extract

1/4 cup goji berries (chopped)

A sprinkle of sea salt

Method 

Put all of your base ingredients into a food processor and blitz for about 20 seconds (until the dates are completely blended and the consistency of the mixture is firm enough to mould into your baking tray or cake tin) I used a loose bottomed cake tin, as this is easier to release when the cake is done. A small 10″ for a slightly thicker base.


Leave on the side and start making the ganache. Heat the coconut oil in a small pan, over a medium heat. Once melted, take off the heat and add the rest of your ingredients. Give it a stir but don’t over work the mixture. You want the ganache to have a nice shine to it.

Pour it over your base, covering it completely. Then pop in the fridge for about 20 mins. Take out and add your chopped goji berries and a sprinkle of sea salt. Put back in the fridge for about 30 mins.

Store in the fridge or you can freeze and take out, as and when.
