COURGETTI AND ROAST PEPPER STIR FRY
What do you do when you’ve been stuck in traffic and need to feed an army of hungry mouths? Well, you open the cupboards, grab what you can, whack the oven on and throw some food at it. From cooking to plate, this gorgeous courgetti and roasted pepper stir fry, took about 30 mins, and was delicious.
Throw some peppers in some coconut oil. Pop in the oven at 200 fan asst & cook for about 25 mins.
In a wok, pop some broccoli, red onion, mushrooms, leeks and a table spoon of dried mixed herbs. Fry off in coconut oil for about 10 minutes, then add your spiralized courgette. I did two.
Spiralizing is so easy and gives you such great courgetti to use with pasta or stir frys. I use a Hemsley & Hemsley one but you can pick them up from most supermarkets or cook shops now. Or order online. This one was about £15.99.
So if your ever stuck for inspiration, have a look at the veg you have and what delights are in the cupboard. Chances are you can cook up a storm in super quick time.
