Oh it most certainly feels good to open the curtains and see that crystal clear blue sky and shining Sun. Everything just feels so much better when the sun is out to play, doesn’t it. I even got to mow my ridiculously long grass and clean my very dirty windows today, a sure sign that Spring is in the air.
We’ve been out, out all week this week. Kickboxing, outdoor lessons, walks in the wood, catching up with friends…..Home Ed certainly keeps us on our toes, which is great but hasn’t left a lot of time for cooking. So tonight I’m turning to my fail safe almond crusted cod and Swede chips. Quick easy and yummy. Even my little beloved eats this!
2 large organic cod fillets (cut into bite size pieces)
2 cups of ground almonds
2 eggs (beaten)
Salt and pepper
2 tsp dried dill
Pre-heat your oven to 180 fan asst
Add Salt, pepper and the dried dill to your Almond mix.
Dip your cod into the egg and then place into the almond mix. You may need to pat it on, to make sure it sticks.
Place on an oiled baking tray and cook for about 10 minutes. Then turn the pieces over and cook for a further 10 minutes. If the pieces are small and thin, maybe cook for 8 mins both sides. If thicker pieces, maybe 12 mins each side.
It’s delicious served up with Swede chips and long stem broccoli. A little lemon mayo on the side.
Simple, light and a very tasty alternative to regular fish n chips……
