Sockeye Salmon is a regular in my house. Red rich in colour, ridiculously tasty and full of antioxidants. It is anti-inflammatory and packed with vitamin B12 and Omega 3 fatty acids. All of which help maintain healthy bones, skin, hair, your heart and is a fantastic immune system booster.
So why Sockeye?
Wild salmon is by far superior than regular salmon in my opinion. Not only does it taste better but It hasn’t been chemically enhanced and doesn’t have any preservatives running through it. Unfarmed salmon is far better for the fish and so much better for our health and the environment.
I usually pan fry the fillets for about 3 minutes each side. I like it slightly pink in the middle, but if you want it cooked all the way through, cook for slightly longer. Make sure the pan is hot, so the skin crisps up and the flesh is nicely seared on the outside. I cook them in coconut oil, salt and pepper and right at the end I throw a knob of butter in.
Serve with cauliflower rice and a lemon dill mayo.
Delicious, quick and so easy.
