No bake brownies are the best! 

A tweak here, a tweak there and voila, No bake brownies to satisfy the sweet toothed In all of us. The difference with these is that they are actually good for you! Made with Cacao, coconut oil, dates and nuts.

The benefits of cacao

Cacao is essentially a tree. The Theobroma cacao tree to be exact. It produces seed pods in which the cacao bean is extracted from.

Cacao is an absolute superfood, containing hugely high amounts of antioxidants, magnesium and even contains more calcium than milk. It has the most plant based amount of iron and is a fantastic mood enhancer. Cacao powder looks the same as cocoa powder and essentially comes from the same place. However, it does not go through a process. It is the purest form of chocolate and therefore a must have for your larder.


Back to the brownies! 

Ingredients 

1 1/2 cups of walnuts

1/2 cup flaxmeal (I use Linwoods Flax, sunflower, pumpkin, sesame and goji berry mix. See above)

12 medjool dates (pitted and chopped)

1/2 cup of raw cacao powder

1 tbsp coconut oil

2 tsp vanilla extract

Topping 

1/2 cup of raw cacao powder

1/4 cup of coconut oil

2 tbsp of raw honey

2 tsp vanilla extract

Method 

Put all of your base ingredients in a food mixer and blitz until you have a smooth consistency. About a minute.


Grab a square baking tray and line with baking parchment. Fill it with your mixture and pat it down until it’s about an inch thick.


For the topping, melt your coconut oil on a low heat until melted. Take off the heat and whisk in your cacao, honey and vanilla. 

Pour over your base and pop in the fridge for about 2 hours. Then cut into squares and store in the fridge. Take out as and when.


They are truly delicious. In fact I’m about to dive into the tin and have a couple now!
