A tasty treat for your mid-week! 

CHILLI AND SMOKED PAPRIKA SWEDE WEDGES

These were divine. Sticky, hot and guzzled down in 5 seconds! They taste quite similar to sweet potato fries but are much lower in carbohydrates, meaning your glucose levels won’t go through the roof. So simple to make and delicious dipped in lemon mayonnaise.

INGREDIENTS 

1 Tbsp coconut oil

1 large Swede (peeled and cut into chip/wedge shapes)

2 Tsp smoked paprika

2 Tsp hot chilli powder

1 Tsp ground cinnamon

Salt and pepper

METHOD 

Pre-heat your oven to 250 f-asst 

Put your chopped Swede in a large pan of boiling water, cook on a medium-high heat for about 35/40 minutes. Drain well, shake and leave to stand for 5 minutes.

Put your coconut oil in a deep baking dish and pop in the oven for 2 minutes, or until melted. Add your Swede and coat in smoked paprika, chilli, salt and pepper.

Turn the oven down to about 200 f-asst and roast for about 30 mins (Keep checking to make sure the Swede doesn’t burn) Give them a shake and then add the cinnamon. Cook for a further 5 mins and serve. I added another pinch of salt right before serving.
