It seems this winter has stepped up a gear. It is so cold! We have been at our home ed English and maths classes today and in between the lessons, the kids get to let off steam. A great idea I think. I don’t think you can expect 6 year olds to just sit still and focus for too long. They need to let go.
We are part of such a great community and a lot of our meets are outside. Today I thought my toes were going to drop off! They didn’t, fortunately.
Driving home through the frozen hills of Sussex, my mind starts to think about dinner. I need something quick, warming and delicious. As its cauliflower week, it also has to involve said vegetable. So, a quick and very easy way to cook it, is to roast it. We had roast chicken and some winter veg with it and it certainly did the trick.
1 Large Cauliflower (Broken into flourettes)
2 Tbsp Coconut oil
Salt and pepper
Pre-heat your oven to about 180 fan assisted. Coat a medium sized baking tray with coconut oil and pop in the oven for 5 mins or until the oil melts. Take it out and smother the flourettes in the oil, salt and pepper. Roast for about 20 mins or until the cauliflower is cooked. Keep checking, you don’t want it to burn.
Serve with roast chicken and veg and enjoy!
