Here’s a tasty treat for a very cold Thursday. Its simple to make and so delicious……
AUBERGINE & COURGETTI STIR-FRY
1 Tbsp of Coconut oil
1 large aubergine ( in thin strips)
1 large courgette ( I use a spiralizer but you can just cut into really thin strips)
1 large red onion (chopped)
1 large handful of chestnut mushrooms
1 tsp chilli powder, or 1 fresh red chilli
1 tsp smoked paprika
½ tsp cinnamon
Salt and pepper to season
Put your wok on a medium heat, then add the coconut oil and spices. Fry off for about 2 minutes and then add the onion, aubergine and mushrooms.Fry off for about 10 minutes and then add the courgetti. Cook for a further 10 minutes and then serve.
It really is that simple…..I add a sprinkle of smoked paprika and then devour.
